So bring us some Marsala-Infused Christmas Cakes..


One of my favourite things about Christmas is the food. I love a table groaning under the weight of delicious fare; I’m a traditionalist so we have turkey with all the trimmings, mince pies, a Christmas cake and Christmas pudding. 


The cake takes pride of place because it’s not only very much anticipated, it also looks like a work of art! Kate from Dolce Lusso is an incredibly talented cake maker, and her creations have to be seen to be believed. This is one of her wonderfully sophisticated Marsala-infused Christmas cakes.

 

Part of what makes the Christmas sessions so distinctive is the total envelopment of the senses. It doesn't just look like Christmas, it smells like it too! The rich scent of the real pine tree mingles with the warm, sweet fragrance of Dolce Lusso’s freshly baked ‘bauble’ cakes, it’s so heady you leave feeling more excited for Christmas day than ever!


Last year we had such fun with the sessions; children posed with treats for Santa, and their rosy cheeks and excited smiles made the most beautiful Christmas cards and family photos. 

Some parents joined their children to capture the moment as a family portrait - it’s not often everyone is well-dressed and looking at the camera!

So, who’s the talent behind the showstopping cake creations? Enter Kate from Dolce Lusso. I stole Kate away from her kitchen to chat about what she loves about her job and to share her tips on making the perfect Christmas cake.


A little about Kate
Having grown up in a family of creatives, including bakers and wedding cake makers, Kate has always loved baking. Her real passion, however, is handcrafting bespoke wedding cakes, and edible treats, created from the finest ingredients available and decorated to the highest of standards. 

Her showstopper creations are for those who appreciate the finer things in life.

Kate has created some of the most sensational wedding cakes I’ve seen (and I’ve seen A LOT). It’s her creative flair paired with her talent for nailing the details that makes each cake a work of art and worthy of her outstanding reputation.

 

But what about Christmas? After what has been a very busy wedding season, does Kate like to take some time off over the festive break?

“For me, Christmas day has always been a double celebration - I’m turning 50 this year! It’s that magical time of year when my loved ones come together, take time to be thankful for our blessings and celebrate my birthday. On this day, delicious food and wine is an essential ingredient, as is a Marsala-infused Christmas cake, of course!”

 

For those making their own Christmas cake, Kate shares her top tip; “it’s important to take your time when baking your Christmas cake – bake low (temperature) and slow. It is also imperative to bake your cake ahead of time to allow your flavours time to get to know each other.”
